A few weeks ago, I saw a recipe for Dairy Free Chocolate Pudding on a fellow Health Coach’s FB page made with avocados, cocoa and strawberries. It looked and sounded delicious. A day or two later I was gifted a cookbook from a friend, and inside was a similar recipe for Dairy Free Chocolate Mousse, also avocado based. The following day I realized that an entire bag of avocados (4) I had recently purchased were all very ripe and needed to be used up immediately. How could I not pay attention any more. I got my recipe out and gave it a try…and I am so glad I did. I was amazed at how satisfyingly rich and delicious it turned out, and it only took me 20 minutes from start to finish. Definitely going into our regular rotation!
Dairy-Free Chocolate Mousse
Slightly adapted from “The Healthy Cook”.
First I put 2 ripe avocados,1 banana, 1/4 cup of maple syrup, 1/2 unsweetened cocoa and a tsp of cinnamon and a tsp of vanilla extract in the food processor.
Puree until smooth. I scooped mine out into 6 ramekins. It looks like a small serving, but the mousse is so rich you don’t need a lot. If you prefer, you can chill the full batch in one bowl. Chill for a minimum of 2 hours to overnight. I found the longer it chilled the better the flavors came together. This also would be good served over a bowl of fresh berries.
Note: It did have a strong banana flavor, so if that is not your thing I would half the banana with 1/2 cup berries or dried cherries.

This recipe is not just delicious, it is also nutritious. It is loaded with antioxidants from the cocoa, vanilla, and maple syrup. The cinnamon and the avocados stabilize blood sugar and improve joint health, and bananas are with blood-pressure lowering potassium.
