Nourish Yourself

Now this tip certainly won’t be news to any of you.  We have heard it all of our lives; Our mother’s told us, most diets we have either been on or read about have emphasized it.  We know it is better for us, but we just don’t do it…or at least not enough. Current recommendations are for up to 3-6 servings of vegetables and 2-4 servings of fruits each day ( I recommend only 2 fruits though due to the high sugar content, even though natural.  We just have too much sugar in our diets.)  Half your plate at each meal should be made up of veggies.  Here are 5 reasons for you to eat your veggies:
  • Keep you energized.
  • Reduce risk of chronic illnesses.
  • Promotes a healthy gut, home to over 70% of your immune system.
  • Keep you full longer.
  • Crowd out unhealthy choices.
I am including a fast and easy recipe full of colorful vegetables, Marinated Chopped Veggie Salad.  It is my new summer favorite.  It is great alone, as a side dish, or on top of a salad.  I love having it in the fridge for a quick and easy, healthy choice.  Double it to cut down on time in the kitchen.  Remember …cook once, eat twice.
Sometimes all the information about organic vs conventional produce is confusing, so I wanted to give a few pointers to help clear it up some….no matter what eating vegetables is better than not eating them.  If you are concerned about quality, local is best, organic next, then conventional and frozen. Buying organic can be costly so to help,   read more on the “Dirty Dozen” and “The Clean Fifteen.”
